I made these buffalo cauliflower "wings" today and they were awesome. Crunchy on the outside and soft on the inside. I (kind of) followed this recipe, but added some other spices (e.g. mixed onion salt from Trader Joe's) to the mix.
Indonesian Corn Fritters with pickled Cucumber Salad
1 can corn kernels 1/4 cup green onions, sliced 1 tsp. garlic, minced 1 tbsp. Sriracha sauce 1/2 cup all-purpose flour 1/2 tsp. fresh ground pepper 1 egg Vegetable or canola oil for frying Salt, to taste
In a bowl, combine corn, green onion, garlic, Sriracha sauce, flour, and pepper. Mix well. Lightly beat egg and combine with corn mixture. Heat oil in a pan. Drop spoonfuls of mixture into pan. Cook until golden brown on one side, then flip to cook the other side. Remove with a slotted spoon and transfer to a rack with paper towels below to catch excess oil. Season with salt and serve with your favorite dipping sauce (my suggestion > Gyoza Dipping Sauce from Trader Joe).
Cucumber Salad: Peel and slice one cucumber. Combine rice vinegar, sesame oil, and 1 tbsp. sugar. Add some Sriracha and combine sauce. Add cucumber and let marinate for a few minutes.
